
Soak brown rice the morning before dinner.
I enjoy brown rice as it has an earthiness about it and I don't need so much to feel satisfied. It also is slower to turn into energy, hence keeps me fuller for longer.

Soaking time plus 1 hour
Serves 4
Use organic ingredients where possible
1 Cup Uncooked Brown Basmati Rice
2 Cups water
1/2 Teaspoon salt
1 Tablespoon coconut oil or butter
Soak Rice in water the morning before dinner, drain the water from the rice and rinse thoroughly.
In a medium saucepan with a tight lid, combine rice, 2 cups of water, salt and coconut oil/butter and bring to boil.
Once it reaches the boil, reduce the heat to very low and cook for 50 minutes with the lid on.
Check the rice after 50 minutes. The rice is done when it is soft with a slight crunch.
If the rice needs longer add a 1/4 cup of water and cook covered for a further 15minutes.
Once done remove and let sit uncovered for 5 minutes then fluff with a fork.
If it is cooked but has too much water, pour the excess water off and rest with the lid off for 10 minutes to allow the water to evaporate, then fluff with a fork.
Serve or store in a glass container in the fridge to add to further meals through your week.
